Watermelon is delicious, refreshing and so quintessentially summer, but often we shy away from purchasing it solely because you end up with mass amounts of excess fruit. Perfect for parties, not so perfect for every day meal prep.

Over the weekend {while slicing up the said giant watermelon}, we were thinking about how to use up all of the fruit and decided to make watermelon infused lemonade. This recipe is simple, flavorful, and makes enough to serve at your next party! Nothing says hostess with the mostest quite like homemade lemonade, right?! 😉

  • 1 medium watermelon
  • 3-4 medium sized lemons
  • 1/3 cup of sugar
  • Water
  • 1 teaspoon thyme

Cut up your watermelon in half, and then cut one of the halves into chunks {save the other half for fruit salad, watermelon caprese or fruit kabobs!}. Place two cups of the watermelon into a blender along with two cups of water. Blend until smooth. Strain the juice into a pitcher and set aside {we use this mesh strainer}.

Using a juice press {or your hands}, squeeze the juice out of all of the lemons. Strain the lemon juice and add to the watermelon juice. Strain the combined juice mixture one more time. Stir in the water and sugar.

Now, for adding in the thyme. If you are using fresh thyme, you can place two or three sprigs directly into the lemonade. If you are using dried thyme, place about 1 teaspoon into a mesh tea strainer {like this one here}.

Let the thyme steep for 15-20 minutes. Remove the thyme leaves and stir your lemonade once more. Store in the fridge, or serve immediately over ice. After storing, if the lemonade separates, don’t worry, it’s natural. Just stir it back up before serving!

We hope that you enjoyed this recipe. Lemonade is our go-to drink of choice during the summer – what’s your favorite?
